Olive production for the production of Denomination of Origin oil ("Aceite de Campo de Montiel") will be the rule of safety regulations.
These standards have a set of recommendations and prohibitions, are based on sustainable production techniques and respectful of the environment. Its compliance guarantees an extra virgin olive oil, quality, healthy, trace and certificate of origin. They regulate the optimal period of time of transportation of the olive and the mode of transport until the date of change, respecting the traditional cultural practices of the producing area, which includes one of the signs of the identity of the Campo de Montiel oil . In the same way the norms and actions that are carried out in each moment, the responsible part of the mill, as well as the hygienic-sanitary requirements, of equipment, etc., to be fulfilled by these facilities are described.
The efficiency and compliance with the standards are implemented through continuous technical advice and control at the entrance of the olive in the mill, which must disqualify the parties from the production and handling of the standards regulated in this general technical specification .
